Found BigOven while looking for a recipe/inventory/scaling program as planning for cooking for 45 to 50 people for a week on a missions retreat! (May need a sous chef or two for this one!) I enjoy cooking my heritage foods (Southern) with international flavor spins from numerous places I have lived overseas. I lean toward one or more of the oriental flavor sets, but equally enjoy mideast and Meditteranean. Of course, a big old mesqui

JessiLove, I personally don't think the pineapple is intrusive and the texture and the moisture is necessary to make it work. If you try something else, post a review and let us know how it worked. You just MAY invent a new dish!! — NashvilleJoe 4/23/2011

Nice blend of summer flavors! One caution: This is unexplainably rich!!! Try small servings at first. Excellent dish, though. [I posted this recipe.] — NashvilleJoe 7/25/2005

CHAPMAN BREAKFAST CASSEROLE

This is a different version of a breakfast cassarole I've made for years. I like the mushroom soup variation this adds. I would add softened (saute'd) onions and garlic for a deeper flavor set. Would like to try a version using Habanero pepper as well since I'm pretty well a ChiliHead!!! [I posted this recipe.] — NashvilleJoe 7/25/2005
