Grandma's Meatloaf, Roasted Brussel Sprouts, potatoes and Pear crumble

I live in Sunny SO CAL!!  This enables me to garden and grow lots of different fruits and veggies.  So besides cooking, gardening is another fun hobbie.  I spend lots of time preserving my harvest in the summer!!

I like to spend time learing about different types of food - Thai, Moroccan / South African / French, Indian, etc....  I love taking classes on different cuisines.  I am interested in taking an executive chef course now to simply build my basic skills !!

This was EXCELLENT. I had purchased incredible Tuna at Sprouts. The recipe is BETTER than our local Restaurant (now our previous favorite) at 30.00 a plate! LOVED the sauce but lightened it up with half the butter and Fat Free half and half. Still OUTSTANDING! I did not strain the sauce because I thought the texture was good with the smooth and silky tuna. Served it with Forbidden rice with a bit of sesame oil, rice vinegar, soy and chives mixed in to taste and my lemon roasted Aparagus. SOOO good. I will make it again and again.

This is an EXCELLENT soup. Not that much work at all for the flavor. The cuban flavors are really good, not overdone. It's now THE favorite Lentil soup in our house as deemed so by my husband! Usually I change recipes like crazy....Not this one, it's perfect like it is. I added carrots per the suggestion which I loved but I wont be changing anything! Also, thanks for a well written recipe. I appreciate that...I didnt have to ask questions or wonder about anything...cant wait to try your other recipes!!

This was very good, but I added a lot to it....a tablespoon of fresh minced ginger, 2 minced garlic cloves, 1 onion thinly sliced 1/2 bunch green onions, 1/4 orange or red bell pepper, 1/2 cup stir fry sauce and seseme seeds. The basic recipe is good but a bit bland so it needs extra. I submitted my photo for this dish so you can see how nice, inexpensive and very tasty it was. Definately a winner.

I made these tonight for dinner. I thought the roasted salsa was excellent, but the enchiladas were not that great for two reasons, the flour tortillas (even though you broil them) just tast kind of gummy and I dont understand the can of store bought encilada sauce when there is TONS of the homemade salsa. It would be so easy to turn it into enchilada sauce. Half of the family thought they were amazing and the other half said to continue to make my own recipe. I may try again and change to CORN tortillas like one reviewer states and redo the can of encilada sauce to something a bit more enlightening.

This was a terrific stew. I changed the recipe from the get go a bit. I added a 28 oz can whole tomatoes with juice, 1 cup beef stock, 4 cloves garlice and 1/2 teaspoon ras el hanout. It was beautiful and had the perfect amount of moisture, although there was no juice even at that. VERY delicious and gorgeous. I served with simple sauteed talapia with stew over and on the side. Family loved this healthy dish!!

Hands down the best brussel sprouts I have EVER eaten. I made the best dinner....Grandmas meatloaf (this site), This recipe, Smashed potatoes, and a delicious Pear tart (this site) and the best part of the meal for the whole family??? the BRUSSEL SPROUTS...!!! Now, I am being sent to the market for more IMMEDIATELY by order of the highest decree!! LOL

Grandma's Meatloaf

This is a very flavorful "old fashioned" meatloaf. Really light and super moist. I am trying out lots of meatloaf recipes as my new son in law doesnt care for my recipe and my daughter is looking for a new one. This will definately satisfy EVERYONE. Old fashioned, but very good. The red sauce is not ketchupy, but instead has a great sweet flavor. It baked and came to temperature in only one hour in my oven. The only thing I changed was to add a bit more flavor to the meat, garlic and onion powder. other than that. Perfect!!

I doubled the sauce and cheese as the picture neither looked saucy or cheesy enough. I added some garlic with onions and ricotta cheese during layering. I had a bit of the sauce left over which was perfect for use eleswhere....Very good...nice flavor to sauce and easy!!
