If you like Thai flavors give this a whirl. This recipe has been in my rotation for a year, and it does not disappoint. I always add tilapia. I use lite coconut milk, increase curry paste by half, and sub barley for rice. We love this recipe! Don't leave out the fresh lime or basil. — promfh 3/29/2014

Update: I have made this recipe for years now, and I have some variations. Filling: Sometimes I use zucchini, but we actually prefer broccoli, and I ALWAYS add sweet corn either way. Seasonings: I have two variations - Cumin, coriander and adobe seasoning, OR basil, oregano and thyme. And I use garlic powder in both. The cumin version is so tasty with the broccoli! Crust: Sometimes when I make the Mexican version I overlap corn tortillas for the crust. I have used regular pie crust, too. Cheese: I like a mix of Swiss, cheddar and Parmesan, but don't you know it's all good?!! Yum, cheese! — Athtart 11/10/2013

Delicious! No Mexican melting queso at grocery, so I made a roux using pepper jack cheese. I added cumin & taco seasoning, next time I'll include garlic. I blackened chopped veggies in a pan and added some charred sweet corn. Yum. — swibirun 10/31/2013

Tastes fat free. Needs a lot more seasoning. I skipped the sherry because I didn't have it, but other than that I followed the recipe. Tripled the garlic because we like a lot of it, and added a chopped jalapeño for heat. Still bland. Really needs salt and pepper. Maybe roasting the veggies separately would increase flavor. I like the healthfulness of this dish but it needs a boost. 9/11/2013

This was freaking fabulous. I used pork loin ribs instead of boneless loin, cause bone adds so much flavor. I used 2 cups of pork broth leftover from the "kickass carnitas" recipe also listed on big oven. I simmered the stew for two hours and the meat fell off the bone. I served it over brown rice. This was moist, tender, delicious and easy. I cooked it in crock pot on low 17 hours. Then I spread it in a 9x13 pan & sprayed it lightly with oil then cooked it at 400 degrees in oven for 20 min to crisp edges. Yum. Unfortunately I used a 4.5 lb pork shoulder but did not increase seasonings. Duh! Next time I will increase garlic & hot peppers. — wales1 5/1/2013

Very good, quick and easy. When I tasted it before serving it was a little bland. I didn't have Italian diced tomatoes, maybe that's why. I had already doubled the thyme so I added Worcestershire sauce. The next time I make this I will double the garlic, and maybe marinate the fish in lime juice, and add chicken broth. 4/15/2013

Great soup. A trick I've learned is after sautéing onions and garlic in oil, add the salsa. Allow it to become fragrant and wake up in the oil for a minute or two before continuing with lime juice and cumin and beans. 4/1/2013
