If fresh tomatillos are not in season, you can easily make the sauce by "doctoring up" a jar of tomatillo salsa, as my grandma would say. Here is why I did that worked well: add two roasted jalepenos +/- more roasted chiles (depending on how spicy they are) pureed an the juice of one lime.
