I'm a line chef at a well known chef's restaurants in California (No, I won't say where or which).  I enjoy seeing what recipes others come up with and might share a few of my own.  No recipe secrets though, we're not allowed to give out recipes so don't ask, please.

I also cooked this for longer than directed. Nice dish, authentic and tasty. Went perfectly with pork loin and white wine. 2/26/2013
Chicken Enchiladas Suiza (Enchiladas with Sour Cream Cheese Sauce)

Chicken Enchiladas Suiza (Enchiladas with Sour Cream Cheese Sauce)

Simple to make, and an amazingly sumptuous sauce that left me wanting more and more of it. I daresay filling them with only cheese would be enough but no, you had to go and add chicken to make my tastebuds strain for more! Served with black beans, rice, and my signature avocado cream sauce just because. Absolutely terrific, well done! — Firebyrd 2/26/2013

Braised Spinach with eggs and bacon

Braised Spinach with eggs and bacon

Simple and elegant. I truly enjoy recipes like these, for they showcase skill and exquisite ingredients. No lard or cream of chicken soup used here! — sunovakR 2/25/2013
Easy Cornish Pasties

Easy Cornish Pasties

These are a staple in my home as of last night. Savory and meaty with a wonderful vegetable blend in a flaky warm crust...I'm quite fond of these; well done! — Firebyrd 2/20/2013
El Charro Cafes Fruited Rice

El Charro Cafes Fruited Rice

Not bad at all. I truly enjoyed the novelty of having some sweetness in my rice. Paired with a steamed chipotle-spiced halibut, vegetables and a glass of Gewürztraminer. 2/18/2013
Meringue with pepper and vodka strawberries

Meringue with pepper and vodka strawberries

This is an abomination...but I loved it. I had strawberry cheesecake ice cream and did it. Either way, vodka'd berries are the way to go. — littlebubbles 2/14/2013
Pan-Seared Filet Mignon (Beef Tenderloin) with Shiraz Sauce

Pan-Seared Filet Mignon (Beef Tenderloin) with Shiraz Sauce

Excellent. No complaints, this was perfectly contrived. I will be making this again! — sgrishka 2/14/2013
Pasta with Lemon-Pistachio Sauce and Spinach

Pasta with Lemon-Pistachio Sauce and Spinach

A bad recipe. What a combination of damp, insipid crunch from the nuts and tasteless mush! Plus I should have gone with my better judgement and processed until smooth, but I wanted to see how this recipe would turn out exactly. Pity; I was rather excited as it had piqued my interest. But sometimes using outlandish ingredients just for the sake of something -interesting- is bad news. — Tresyk 1/23/2013
Peppermint Drum Cake

Peppermint Drum Cake

Made this a few days ago for an office holiday party. Fantastic! Everyone was remarking how minty-fresh it tasted. Thanks, this is going in my perma-keep recipe box! — Firebyrd 12/10/2012
Blues Hog Bbqueban Sandwich

Blues Hog Bbqueban Sandwich

I enjoyed this recipe a good deal due to your fine suggestions. I'm a large fan of yellow BBQ sauce myself, truly enjoyed this gourmet panini! — swibirun 1/10/2012
Creamy Asparagus Soup

Creamy Asparagus Soup

Delicious. No subs, I love asparagus and wouldn't allow any. The use of an immersion blender was helpful in this, thank you for mentioning this. — cajuntoast 1/9/2012
Gnocchi with Sage, Butter And Parmesan

Gnocchi with Sage, Butter And Parmesan

I did like this recipe a good deal, while the sauce is typical it was quite delicious when done right. The one suggestion I have is for you to improve the formatting on the directions, no one likes to muddle through a large chunk of text. 4*s for the recipe however, well done! 1/8/2012
Beef Yakitori

Beef Yakitori

I concur, touch more garlic but otherwise pretty great. This recipe has fans in my restaurant staff for a snack on the job. Pretty clean recipe, just shows It's all in the execution. — Firebyrd 1/4/2012
Favorite Chili Mac

Favorite Chili Mac

Brought me back to college days with those Hormel drypack meals, or Chef Boyardee, can't remember. Bland, bland, bland, not much originality here. But, it filled me and would still suit a child's palate well. — sgrishka 1/2/2012
Grilled Chicken Fettucine Alfredo

Grilled Chicken Fettucine Alfredo

How one manages to make a recipe that comes out both dry and oily is a mystery to me, but here it was. When there is both butter and cream involved, steps need be taken that were not. Try just sauteeing the chicken and perhaps some basil in the butter instead, perhaps? — CookingPassion 1/2/2012
Alligator Eggs

Alligator Eggs

Content of recipe isn't bad, but the ingredients are out of order which made it a bit hard to follow for my daughter who is a sous chef. When you have this many ingredients, you should at least put some time into organizing them. 12/27/2011
Giblet Gravy

Giblet Gravy

Excellent rendition of the Perfect Gravy. Everyone should keep these fine instructions at hand. — lparish 12/4/2011
Slow Cooker Carnitas (Pulled Pork)

Slow Cooker Carnitas (Pulled Pork)

A very delicious way to flavor a low-cost meat, smelled great while cooking, and cooked through tender to boot. I also appreciated the suggestion to put in the oven to give the meat even more authenticity. I will be making this again, thanks for posting! — Firebyrd 12/3/2011
Turkey Breast with Sausage & Apricot Stuffing

Turkey Breast with Sausage & Apricot Stuffing

I made the stuffing today to get a feel for the overall flavors, they are truly fantastic as MinnaPepina said. The pecans are the best bit; they will give the turkey an incredible tenderness due to their natural oils. Wonderful recipe, Thank You! It is going to be a hit on Thursday to be sure. I am going to double the ingredients and use a whole turkey instead however, we like dark meat too! — Firebyrd 11/22/2011

Woman, for I do not believe you to be any sort of a lady the way you run your mouth, I rated things that I cooked, everytime as my wall proves. Perhaps you should be taking your own advice, as your own wall shows you to 'review' something for 5 stars "..Just thought this deserved another 5 star rating", or even better "I did not make it, but I have had this at restaurants and its very good." As for giving yourself 5*'s...didn't you just do that today ""I made a correction to this. Meat cuts like butter!!" on your crockpot sirloin? Pot, meet kettle, and put a lid on.
