I am one of those souls that sees every bitty left-over as an opportunity to create a fresh new dish. My Aunt Jesse worked in Bamberg, SC teaching folks about good nutrition and how to cook well for your families when you don't have much cash available. I believe she did good work and it is what I remember her for.

I have been very focused on learning more about the foods I eat as part of my journey to a satisfactory weight for my height.  I have gotten a good deal of enjoyment of exploring new vegetables and creating low calorie, low carbohydrate healthy meals. 

I am no vegetarian and enjoy a good steak, roasted chicken and grilled lamb at every opportunity.  Cooking for two, and being married to a fussy eater husband (lovingly known as Mr. SuchAFuss) means I'm often cooking just for me and my husbands parents who live next door. 

Good food is meant to be shared so I'm very greatful to have his folks so close by.  Mom makes sure to keep the herb garden planted for me.

This is a very fresh different slaw which is easy on the figure. Just a note for those of you who may not use cabbage often. Cut most of the thick white part of the leave away. This is bitter and tough and many don't care for it in a salad. I use a v-shape to cut it out. 1/3/2010

All the grease drains out and you have uniformly crispy, brown skin all the way around the chicken.
