Hay, everybody!  My name is Lew Hubbard and I'm from Rayville/Monroe, Louisiana.  I have a wonderful wife, Laura, and two children, Lewis, 24 and Olivia, 21.  The name "Papa Lew" comes from my son's fraternity brothers.  (Sigma Nu at LSU)   He would invite them up to Monroe to our home or to our lakehouse and I would cook for them.  The name stuck.  My daughter is now a Junior at LSU (Chi O sorority) and doing well.   I guess I'll be Papa Lew for a few more years!

I would have to say, cooking for my family and friends is my favorite pastime.  I enjoy the fellowship we have when we are in the kitchen.  Boating and playing the piano are also favorites.

I thought this website was a good idea to get recipes to my children at college and to help teach them cooking techniques.  Over the years I have gotten many compliments on my recipes and I hope you will enjoy them too.

 

    Most of the food I like to prepare and eat is traditional fare.  To me, food has many memories associated with it.  Some of the Old South dishes my grandmother would prepare were so classic.
I also like New Orleans cooking, Creole and Cajun cooking, camp cooking, and of course, plain old southern country cooking.  I am not a big dessert cook or a pastry baker, although I am preparing more of this as I get older.
    Smoking, grilling and barbecuing are big favorites of mine.  It's hard to beat a charcoaled ribeye, baked potato, sauteed mushrooms and a green salad!  I bet we have that meal once a week.  During the summer at the lake house, the grill never cools down.  There is always smoke coming from it!  Also, I enjoy frying.  Anything fried!  There is something about that crust forming on the outside of the meat or vegetable that I like!
    During this busy time of my life I find I don't have the time to cook the elaborate dishes I used to.  So now I am experimenting with easier, faster and lighter dishes.  But that doesn't mean I wouldn't take the time to prepare Lobster Newberg!
