Spaghetti alla Puttanesca

Spaghetti alla Puttanesca

This was quite tasty and a good weeknight meal. I only used about 1/3 c olive oil and may have thrown in a couple more garlic cloves. Other than that, I left the recipe unmodified. Good stuff! — sgrishka 5/28/2014
Black-Eyed Pea Casserole

Black-Eyed Pea Casserole

This was surprisingly good for the limited amount of ingredients. Makes for quick prep on a weeknight. I would definitely make it again. — Mferguson408 5/14/2014

Tasty! Cream was called for in the ingredients but was not listed in the directions. I added it in the last 15 minutes. — GirlWithHealthFood 2/18/2014

Baked Spaghetti with Fresh Basil and Smoked Mozzarella

This was good. A little bland. I would probably add some more seasoning next time. — lizmari 2/17/2014

Almost forgot... I also substituted a Thai seasoning blend I bought at the grocery store for the chili powder called for in the recipe. Not sure what chili powder was intended, but regular didn't seem right... — off2cook 2/11/2014

Almost forgot... I also substituted a Thai seasoning blend I bought at the grocery store for the chili powder. Not sure what chili powder the recipe intended, but regular chili powder certainly didn't seem right... — lizmari 2/11/2014

Beef Stew with Chipotle Peppers

Beef Stew with Chipotle Peppers

I would give this 3 1/2 stars if I could. It was pretty good but lacked some flavor I thought. I added some vegetable broth and some cumin and that helped. — ellie36 10/11/2013
Black Bean and Corn Salad with Lime Dressing

Black Bean and Corn Salad with Lime Dressing

I riffed on this recipe a little in order to adjust it to fit some leftovers I had in the fridge. It made an absolutely fabulous light lunch! I would definitely make this again. — OUSooner 9/20/2013
Buttermilk Biscuits

Buttermilk Biscuits

These were super easy to make but super dense. I made them to go alongside a steak dinner and they were really too heavy for that. Bet they will hold up nicely to butter and honey in the morning though! — dma1965 7/29/2013
Simple Spinach and Red Bell Pepper Pasta

Simple Spinach and Red Bell Pepper Pasta

Very simple weeknight meal. I doubled the recipe. It wouldn't really have been enough for 4 as written. I added 1/2 to 3/4 cup of the pasta water at the end of cooking the vegetables - made the whole thing really creamy. I also added way more fresh basil than called for - about 1/3 cup when I tossed the pasta - don't cook with the onion and garlic if using fresh. I also added about 1/8 cup of olive oil when tossing and considerably more parmesan lots of salt and fresh ground pepper. I guess more is better! — lizmari 4/23/2013
Coconut Shrimp

Coconut Shrimp

Yum! I don't like shrimp so I substituted fake crab sticks. Instead of deep frying, I sauteed in peanut oil. Turned out great! I used Bob's Red Mill unsweetened coconut and it blended so well with the panko, even my non coconut eaters ate it. I thought the dipping sauce was very good. We had 2 who really liked the sauce, one that didn't, and one that refused to try it... — CCheryl 4/3/2013

This is delicious! I modified the amount of ingredients quite a bit to suit my personal taste, but the bones of the recipe are great. — stevemur 7/22/2012
