Simple Spinach and Red Bell Pepper PastaVery simple weeknight meal. I doubled the recipe. It wouldn't really have been enough for 4 as written. I added 1/2 to 3/4 cup of the pasta water at the end of cooking the vegetables - made the whole thing really creamy. I also added way more fresh basil than called for - about 1/3 cup when I tossed the pasta - don't cook with the onion and garlic if using fresh. I also added about 1/8 cup of olive oil when tossing and considerably more parmesan lots of salt and fresh ground pepper. I guess more is better!

Coconut ShrimpYum! I don't like shrimp so I substituted fake crab sticks. Instead of deep frying, I sauteed in peanut oil. Turned out great! I used Bob's Red Mill unsweetened coconut and it blended so well with the panko, even my non coconut eaters ate it. I thought the dipping sauce was very good. We had 2 who really liked the sauce, one that didn't, and one that refused to try it...

Gambas al Ajillo - Garlic ShrimpYum! I don't do shrimp so I substituted imitation crab, doubled and served over angel hair pasta. So good! Everyone in the family loved it!

World's Best LasagnaYummerly! This was so cheesey, gooey, oozey good. I shouldn't have eaten so much, but I did.

Beef Penne Pasta CasseroleSimple, rustic, good! I used Morning Star Crumbles instead of the ground beef and added even more cheesy goodness. Perfect with a salad for Sunday dinner.

Parmesan Roasted AsparagusExcellent! I used an Italian Blend of cheeses because that is what I had on hand. The kids even loved it!

Crabmeat Salad with Avocado and MangoMy daughter and I made this tonight. It was a perfect light summer dinner! We used imitation crab and it was wonderful! I left the fennel and jalapeno out if hers and just added it to mine at the end.

Blue Cheese DipThis is super good! I made it for an appetizer to Easter Dinner. It would make a great party dip.

Sweet Potatoes with Rosemary and GarlicThese were da bomb! I boiled them a little too long so they didn't crisp up quite as much as the should have in the oven, but they were still delicious. Both of my kids said these sweet potatoes were the best part of tonight's meal.

Shrimp Ravioli with Mushrooms, Sage Browned ButterThis is a phenomenal dish! I used fake crab instead of shrimp. I think I will steam the ravioli instead of boiling them next time as they got a little water logged. Great recipe to get the kids involved in the ravioli assembly.

Seared Scallops with Tropical Fruit SalsaThis recipe was really light and tasty. I actually used store bought mango salsa that I bought from Sam's and added mint and chili powder to it. It turned out great!

Double-Dipped Fried OkraFantastic! a I doubled the batch so I could eat the leftovers cold right out of the Ziploc every time I opened the refrigerator!

Recipe Vegetarian Pot PieA bit labor intensive, but ok for a Sunday night dinner. I would reduce the cayenne pepper to 1/8 tsp. This was a bit too spicy for my 7 year old.

Glazed Lemon BreadMy daughter and I made this the night before Easter for breakfast the next day. Delicious! I will definitely make this again.

Baked Lemon Ratatouille with ChickenThis is delicious! Two of our four family meembers don't eat meat so I cooked some Morning Star Chicken Strips for 10 minutes as directed in the beginning, then removed them until the last 5 minutes. I served this over some long grain rice cooked with half water and half vegetable broth. Very tasty!
