I changed potato flakes to using cubed potatoes - raises carb level. Also added curry powder when boiling the potatoes and cauliflower to make curried version which was delicious. Used vegetable stock and more of it. Drained some of it off and used most of it then added cream but not the milk (not that recipe said when to use the milk anyway). Just tore the spinach to sprinkle in but did this while heating in saucepan rather than in blender as prefer piping hot soup. Literally threw in spinach stirred ten times and served so that spinack wasn't mush! Will definately make again — promfh 9/7/2009

Seriously good...and I don't tend to be a huge fan of veggie dishes but mum a (fish-eating) vegetarian (so generally go for fish dishes to keep me happy!)...but I thought this rocked! Grandma also eating and as she HATES garlic I used sauce without garlic in and used more dried pepper...not just red but crushed peppers....great spicy edge to it...possibly too much of a kick for some but we all loved it! Also left skin on aubergine and was great..so if not opposed to the skin then why waste effort skinning?? Easy to reheat as well so perfect leftovers! Not quickest meal to make but the best things come to those that wait! — kkosobud 8/20/2009

Takes patience as the 90 mins for onions is boring but loved it...did add the white wine as one of others suggested but stuck with the red onions as previously always use white/yellow so was nice for a change...especially the cheesy baguette floater was superb! Lovely! Mum loved it too as total coconut fan! Though didn't think quantities as stated made it taste coconutty and spicy enough so added more creamed coconut and curry powder. Definately will make again...though sure it isn't so good for the waist line! 8/20/2009
