Used crushed cornflakes mixed with melted butter for topping as that was available. The same availability dictated subbing plain yogurt for sour cream. These are excellent. I did use 1/2 tsp salt and 1/2 tsp baking powder to lighten the density a bit on the brownie layer. It is important to completely cool the brownie before placing the mint layer. One also needs to cool the chocolate layer a bit to ensure it does not melt the mint layer. They are tasty and very attractive. Tasty dish. I added two fresh minced jalapeño peppers with seeds removed and 1/2 cup of chopped poblano pepper. The cheese I used was Velveeta and about 2/3 cup. The topping was buttered corn flakes as that was what was in the house. This made a casserole worthy to eat in Tx.
