Southern Oyster Stew

Had a can of (cooked) oysters on the shelf for a long time (originally for turkey dressing). I love seafood and had always wanted to try Oyster Stew. It was delicious! Easy to make. I added 2 dashes of cayenne and about 1/3 to 1/2 cup of left over mashed potatoes. Next time I wil try fresh Oysters. Portwine

Makes a salad look and taste GREAT! Used pecan halves which I had on hand. Refrigerated extra prepared figs. They were delicious cold on my salad the next day. Will try a different cheese next time.

Menudo

Menudo

Liked the receipe becuase it had pork knuckles and the seasonings I was looking for. Would not use the butter next time. Also did not use all the pans, etc. Just boiled the tripe alone for about 10 minutes, dumped water. Then boiled tripe and knuckles together for a while and then added seasonings and cooked till tripe was tender. Much simpler......Portwine
