I HAVE EDITED THIS RECIPE SEVERAL TIMES AND IT IS STILL GETTING THE AMOUNT OF TORTILLAS WRONG. THAT SHOULD BE 6- 6" CORN TORTILLA IDK WHY THE ONE KEEPS POPPING IN THERE. I SUPPOSE THE RECIPE EDITING COMPUTER IS IN WEEKEND MODE:-) BTW IF YOU CAN'T FIND LOW SODIUM TACO SEASONING USE LESS OF THE REGULAR OR THE DISH WILL BE TO SALTY. — PRL182 6/28/2009

This is a real husband pleaser. My husband is not a big fan of chicken or curry but he loves this dish. I serve the sauce over white rice. Take the time to marinate the chicken; It really benefits from a long soak. I will be making this for dinner tonight, I am hoping to get a good snapshot to post. ANOTHER WINNER. THIS WAS SO EASY TO MAKE AND VERY TASTY. I ALSO MADE SOME MODIFICATIONS AND HALVED THE RECIPE FOR TWO. I USED WHOLE BONE IN BREAST (WHICH I BROWNED) WHITE ONION IN THE DISH AND GREEN ONION TO GARNISH. HOMEMADE CHICKEN STOCK INSTEAD OF WATER AND I TOASTED THE RICE BEFORE ADDING THE TOMATOES AND THE LIQUIDS, BROUGHT IT TO THE BOIL, NESTLED THE WHOLE CHICKEN BREAST IN THE RICE AND LIQUIDS, REDUCED THE HEAT, PUT THE LID ON IT AND SET MY TIMER FOR 25 MINUTES WHEN THE RICE WAS COOKED I TURNED THE HEAT OFF PUT THE CHEESE ON THE DISH AND RECOVERED IT UNTIL WE WERE READY TO EAT. I SERVED IT WITH TEXAS CAVIAR http://www.bigoven.com/160205-Texas-Caviar-recipe.html AND TOASTED TORTILLA STRIPS, WE HAD LEMON POUND CAKE FOR DESSERT. Texas Caviar

I made this early in the am today by 2 pm it had been marinating 8 hours. I toasted tortillas and lightly salted them then served the caviar and chips to my husband along with his usual sandwich at lunch. He ate it all and loved it. I must say I love it too. The only thing I did differently was use the whole can of pinto beans. This is going to reappear on the menu tomorrow evening at dinner with another recipe I found on Big Oven "Southwestern Chicken Skillet". BTW, great picture! Gotta go put the rest of my caviar in jars and store in my "chill chest". Oh almost forgot, I think I will try the idea with the mango and jalapeno for the next family gathering and maybe a little cilantro too. — promfh 6/15/2009

Easter Monday Supper Bread

This is a really good recipe. It comes together quickly. I am guesstimating the actual active time as I did the prep work; diced the ham, minced the onions and got the ingredients together early in the day so that when I got home in the evening I could just tossed every thing in a mixing bowl and stir. It is a full meal really. I put 2 wedges on my husband's plate, drizzled them with maple syrup and garnished the plate with 2 cantaloupe slices and 2 sliced strawberries(I wish I had a digital camera, it sure was purr-r-rty). My husband who is NOT a culinary adventurer grumbled something about meat and potatoes then proceeded to clean his plate. I drizzled honey on my wedge...it was very tasty the little bit of sweet played well off of the savory bread. I served it with ice cold milk but I am thinking it will go just as well with a pot of fresh coffee. Thanks for the post. Just a side note. I cooked only 2 chicken breast so there was lots of sauce left. I am freezing it and next time I make Stove Top BBQ Chicken I will reuse the sauce by adding another cup of chicken stock or more if it needs it. Hats off from one Texas girl to another. — Beachbumette 6/3/2009

What a great recipe!! I tweaked it just a bit. I used bone-in, skin-on chicken breast, margarine instead of butter, homemade chicken stock instead of water and Kraft Cattleman BBQ sauce. OMG, I could have drank the sauce. I served it with Knorr Pasta Sides(chicken), tangy cucumber salad, Texas toast and lime sherbet with sugar cookies for dessert. This recipe works on so many levels: Only 5 ingredients, delicious and so-o-o-o easy only 15 minutes actual work time the rest of the time it simmers. I am giving you a medal. Homestyle Meatloaf

Homestyle Meatloaf

I must say this is a wonderful meatloaf recipe. I only cook for 2 these days so I adjusted the recipe accordingly. I also mix my meats 3 to 1 beef and pork respectively. The loaf has an amazing depth of flavor and in spite of looking long and labor intensive it comes together quickly. The Hubs loved it. In fact as I post he is sitting on the back porch smiling and rubbing his tummy. I have already recorded my adjustments and filed the recipe in my fave files. BTW I gave this recipe a metal. Wow - the changes you made in this recipe sound awesome! I'll have to try some of those next time. I would be very honored to have my recipes in your daughter's cookbook! That is a real compliment, in my opinion.
