Retired telecom engineer and communications geek. Have taken an interest in cooking over the past 12 years. Early on I was a photojournalist so I enjoy taking pictures of food I've prepared. I also enjoy traveling to regional cooking schools and taking classes about local specialties. Since I was recently diagnosed with Diabetes I'm learning to cook dishes that are diabetic-friendly. I test them on myself so I know they're probably OK.

I can eat in 14 languages and cook in 6. If it's ethnic, or authentic I'm up for it. I may not like it the first time but I'll try most anything.

I think they mean 1/2 a BUNCH of cilantro rather than 1/2 a bushel. — Sewarsu 10/30/2014

Musgovian Berry Napoleons

This idea was a lot of fun. Granddaughter received lots of complements when she presented this at the table. — promfh 11/20/2013

Turkey Meatloaf

Baking instructions were unclear. I have edited to clarify the issue. — promfh 5/11/2013
Spaghetti Squash With Garlic And Oil

Spaghetti Squash With Garlic And Oil

As suggested by several reviewers, I have reduced the amount of olive oil to 1/4 cup. The flavored oil is used as a dressing and one could certainly reduce the amount used to dress the final dish. Any leftover dressing can be stored for a few days in the refrigerator and used on another dish or as a salad dressing. — promfh 1/14/2013
Easy Potato Pancakes

Easy Potato Pancakes

Tghis is a method rather than a recipe. But the results are excellent. — promfh 1/5/2013
Salvadoran Pupusas

Salvadoran Pupusas

I have to admit I goofed on this one. The recipe is NOT authentic. It is just the ravings of Un Gringo Loco. A friend's Savadoran nanny has invited me to spend time in the kitchen with her learning the correct method. I will post a correct version right after I get through learning from Julia. Lo siento amigos, Perdóname. — promfh 1/1/2013
Bananas Foster-New Orleans

Bananas Foster-New Orleans

I made this for our grandchildren ages 5 & 8. Big eyes and, "Grandpa, that is awsome!" they wanted me to do it again the next night. I was happy to oblige. I did it on the stove rather than at the table. Mom and Grandma both insisted on that. It works just as well there. 10/15/2012
Ham Quiche Biscuit Cups

Ham Quiche Biscuit Cups

I've found that a package of 8 flakey biscuits divides into 16 muffin tin slots (1/2 a biscuit per cup) so I'm updating the recipe to show 16 units total yield. — promfh 5/12/2012
Texas Caviar

Texas Caviar

Good catch "naboozer"! You are indeed correct. The three "forgotten" ingredients are added to the mixture just before pouring the pickling liquid over the whole works. I updated the recipe instructions to clarify this info. — promfh 4/19/2012
Low-Carb Breaded Fish

Low-Carb Breaded Fish

7-grain cereal is a blend of helthy grains. I find it in the bulk section at Whole Foods. It's great for adding to bread, pancakes, or any number of other recipes. I have recently seen 15-grain cereal as well, but any coarsely ground grain blend will work fine for this recipe. — promfh 1/24/2012
Bouillabaisse Impromptu (Seafood Soup)

Bouillabaisse Impromptu (Seafood Soup)

The nutritional content of this dish can vary according to the ingredients selected. The recipe is a general guideline and the cook may select slightly different ingredients based on availability. This is the essence of "Musgovian Cuisine", you look in the refrigerator and decide what leftover ingredients are there that, "Must Go". — promfh 8/9/2011
Fried Dill Pickles

Fried Dill Pickles

Fried pickles seem to be a "Southern" thing. I'm glad I moved to the south. 4/17/2011

Sheryl's Gallo Pinto A.k.a. Costa Rican Rice and Beans

I remember this dish from a trip to Costa Rica a few years ago. It's easy to make, inexpensive, and quite satisfying. — stpagh 9/21/2010
Cajun Style Gumbo

Cajun Style Gumbo

You can change out the chicken and sausage for duck and/or seafood. Gumbo is sort of a, "put what you've got in the pot" dish. I often accompany this with my "Lite Rice" or Cajun style dirty rice. [I posted this recipe.] — promfh 9/11/2010
