What's for dinner?

Retired telecom engineer and communications geek. Have taken an interest in cooking over the past 12 years. Early on I was a photojournalist so I enjoy taking pictures of food I've prepared. I also enjoy traveling to regional cooking schools and taking classes about local specialties. Since I was recently diagnosed with Diabetes I'm learning to cook dishes that are diabetic-friendly. I test them on myself so I know they're probably OK.

As suggested by several reviewers, I have reduced the amount of olive oil to 1/4 cup. The flavored oil is used as a dressing and one could certainly reduce the amount used to dress the final dish. Any leftover dressing can be stored for a few days in the refrigerator and used on another dish or as a salad dressing.

I made this for our grandchildren ages 5 & 8. Big eyes and, "Grandpa, that is awsome!" they wanted me to do it again the next night. I was happy to oblige. I did it on the stove rather than at the table. Mom and Grandma both insisted on that. It works just as well there.

7-grain cereal is a blend of helthy grains. I find it in the bulk section at Whole Foods. It's great for adding to bread, pancakes, or any number of other recipes. I have recently seen 15-grain cereal as well, but any coarsely ground grain blend will work fine for this recipe.
