What's for dinner?
I am a high school English teacher in Riverside, CA. I have been married for nearly 38 years and have two grown sons and a grown daughter. I love writing and, with any luck, will someday make a living as a novelist. In the meantime, 200 seniors in high school keep me pretty busy! I have always enjoyed cooking and now my husband has joined me in that love. Since it is only the two of us at home now, we really enjoy spending time in the kitchen together. We are also gradually eliminating meat from our diet, so we want to learn new ways of cooking and eating healthier.

Hmm...this is difficult. I used to be a pretty big meat eater and I'm now learning how to eat without that as the main part of my diet. Some of my favorite dishes were spaghetti with meat sauce, chicken cacchitore and pot roast with potatoes and vegetables. I also enjoy experimenting with food, so I am looking forward to learning new recipes!

I am wondering if the amounts are correct in the recipe. I followed it correctly and the tofu was extremely salty; not surprising considering balsamic vinegar and soy sauce are very high in salt and then you are adding an additional tablespoon of salt. The flavor was ok, but just way too salty.

3 Layer Vegetarian Mexi-Pizza

I made this dish for my family, including my 6 and 8 year old grandsons. It was the biggest hit! I laid out the ingredients and let everyone build their own pizza. Everyone had a blast creating their own "masterpiece" and the pizzas were delicious! I served this with Spanish rice and fruit salad. It was fantastic!

This was a delicious light summer salad! I used cold leftover rice and it was great. I thought it needed a little more saltiness, so I added a bit of garlic salt to taste. I will make this one again!

This was just delicious! I did not have the right kind of cheese so I just used mild cheddar and it was so yummy! My husband absolutely loved it. This will be a regular at our house. This would make a great dish for company because it looks like you went to so much trouble, even though it's really easy to make.

This was so delicious! We had this on s cold snowy night which made it even better. it is a terrific cold weather dish; filling and a true comfort food! Be prepared for a lot of prep time though, but totally worth it.

Absolutely delicious!! I added some zucchini and substituted water chestnuts for the sprouts. This would be terrific with shrimp or tofu also. My husband can't wait for me to fix this again!

Sauteed Green Beans with Garlic and Herbs

My husband and I really loved this dish. I added a yellow bell pepper, thinly sliced, to the green beens. It added both flavor and color. Next time I will cut down a bit on the thyme, or perhaps add dill instead. This recipe is very adaptable to personal taste and will be a staple at our table! Loved it!

Tofu Fajitas

This was superb! I didn't miss the meat one bit in this recipe. I used brown rice tortillas for this since I am gluten intolerant. I also topped the fajitas with a homemade salsa of chopped tomatoes, red onions, garlic, cilantro, and a little drizzle of olive oil and sea salt. This will be a regular dish in our house! I only wish I'd taken a picture of the finished product because it it as attractive as it is delicious.

Tofu and Broccoli Stir-Fry

My husband and I loved this dish! We are new to the world of tofu and were pleasantly surprised how good it was in this recipe. The recipe didn't specify how to cook the tofu so I marinated the tofu in some of the sauce, then sautéed it until it was browned. Then I removed it from the pan and followed the rest of the recipe, adding it back in at the end to warm. It turned out fantastic.

I made this for lunch and it was wonderful! My husband and I loved it! It is such a versatile pasta salad - you can add or delete according to your personal tastes. I'll definitely be making this again!
