Best-ever browniesPER TRIANGLE 144 kcalories, protein 2g, carbohydrate 17g, fat 8g, saturated fat 5g, fibre O.5g, added sugar 14g, salt O.06g Tips If you are using a normal 20cm square tin, press a 7-8cm wide band of folded foil across the base, to stick up 5cm above the rim on either side, so you can lift out the brownie when cold. Put the baking parchment square on top, then butter the sides of the tin and foil. To double-check the brownies are ready, push a cocktail stick into the centre - it should have a few moist crumbs clinging to it (if it spears a piece of Chocolate, it will be very sticky, so try another spot). Don't overcook brownies, it's one of the worst things you can do to them. They continue cooking for a while after coming out of the oven, and the top sinks a bit to make them fudgily squidgy. It's far better to undercook than overcook, even if they end up not quite set in the middle; if anything they'll be even more delicious. [I posted this recipe.]
