      I am a retired Canadian lighthouse keeper. After 32 years on the lighthouses I retired and moved to live in Linz, Austria, with frequent visits to Hungary and Romania.
 
      Living on the west coast of Canada I had many recipes for cooking, smoking, marinating, barbecuing and drying salmon, plus many other seafoods.
 
      My new wife is actually Hungarian and introduced me to the fabulous foods from that country as well.
 
      Living in Europe has its advantages as I am exposed to many new foods, markets, meats and sausages than what I had seen in Canada, or could not purchase because of the cost. Many of the foods are still home-made and not available anywhere else.
 
      I like cooking, photography, genealogy, computers, biking, and also being retired.

I like to experiment. If I go to a restaurant and see something I like, then I try it at home. My all-time favourite food is Hungarian cabbage rolls made by my girlfriend. The absolute best!

Never-fail Rib Rub

Mix half the spice mix with 1 cup pineapple or mango juice and heat to dissolve the sugar. Baste the ribs - no need to spray with apple juice. Pineapple juice acts as a natural tenderizer as well. Delicious!

The taste is fantastic and the Wasabi Mayonnaise - I can see lots of uses for that! I threw a few cold cooked prawns on the plate as well, which went great with the mayonnaise.
