I am a retired Canadian lighthouse keeper. After 32 years on the lighthouses I retired and moved to live in Linz, Austria, with frequent visits to Hungary and Romania.

Living on the west coast of Canada I had many recipes for cooking, smoking, marinating, barbecuing and drying salmon, plus many other seafoods.

I now live in the Philippines and learning new styles of cooking while keeping up with the old.

My new wife is actually Hungarian and introduced me to the fabulous foods from that country as well.

Living in Europe has its advantages as I am exposed to many new foods, markets, meats and sausages than what I had seen in Canada, or could not purchase because of the cost. Many of the foods are still home-made and not available anywhere else.

I like cooking, photography, genealogy, computers, biking, and also being retired.
I like to experiment. If I go to a restaurant and see something I like, then I try it at home. My all-time favourite food is Hungarian cabbage rolls made by my girlfriend. The absolute best!

Excellent recipe. Couldn't find Gruyere so used a pizza cheese (packaged - Sorry!). Everything was excellent. The addition of ham is a must. — RPThompson 11/2/2009

Lecs?*

Lecs?*

* (pronounced "LETCH-oh"), (Hungarian lecs?, Czech and Slovak Leso, German Letscho, Polish Leczo) Without the rice, the lecs? becomes a sauce that is used with many different meat meals. This recipe is the way my Hungarian wife makes it and is the best I have tasted. [I posted this recipe.] — qwertz 1/21/2009

I do not like raw celery in a salad so I substituted chopped green pepper. It was great! Nice dressing, especially made with home-made mayonnaise. — Buny 7/23/2008

Salad - Summer Prawn Salad with Sweet Piquant? Pepper, Mango and Avocado

source page: http://www.windsorfarm.com.au/?Recipes:Summer_prawn_salad_with_Sweet_Piquant%C3%A9_Pepper%2C_mango_and_avocado Variation: To create a more substantial main meal, add 375 ml cooked couscous to ingredients and double up the dressing ingredients. Toss through lightly. For the peppers, try to obtain the original "Peppadew" sweet piquant? pepper which adds excellent taste, but the instructions for cooking peppers from BigOven ID 161411 are just as great. Never-fail Rib Rub

Never-fail Rib Rub

Mix half the spice mix with 1 cup pineapple or mango juice and heat to dissolve the sugar. Baste the ribs - no need to spray with apple juice. Pineapple juice acts as a natural tenderizer as well. Delicious! — Beachbumette 5/29/2008

Chicken Satay Sticks with Wasabi Mayonnaise

The taste is fantastic and the Wasabi Mayonnaise - I can see lots of uses for that! I threw a few cold cooked prawns on the plate as well, which went great with the mayonnaise. 2/27/2008
