This was awesome! Served it with grilled salmon & wilted spinach & an extra squeeze of lemon over the top. Agree with the other reviewer that the leftovers aren't quite as good. (But that didn't stop me from eating them anyway!) will definitely make this again.
I used a 2.5 lb pork shoulder roast because that's what I had on hand, and left out the onion since I didn't have any, and it still came out great! Super easy and looking forward to the leftovers already.
