Elly's Christmas Pudding

Elly's Christmas Pudding

The British Christmas Pudding is a very rich traditional dessert, served as part of Christmas Day dinner. Of course, many people just can't manage to eat it then, so often it's served later in the day and for several days following because, unless you have a large family gathering, it is too big for one meal. Because it is so rich, most people only eat small portions. The pudding is made as much as three months before Christmas because, stored correctly, the flavour matures. In fact, some people even use them when they are one or two years old. There are several traditions associated with the British Christmas Pudding. One is 'Stir-up Sunday', the last Sunday before Advent, when every member of the family took a turn to stir the pudding and made a silent wish. It got its name from the Collect (prayer) for that Sunday which says: "Stir up, we beseech thee, O Lord, the wills of thy faithful people; that they, plenteously bringing forth the fruit of good works, may by thee be plenteous — rainbowbrush 8/19/2009

Emma likes it better with out the 3/4 cup red kidney beans drained. I use Wholemael - lit lebanese bread and cut each round into 8 peics (I use scisors to do this) to put into the oven. Jan'spineapple and Banana Cake

Some times the cake takes a little longer as it is a wet mix. If the top is browning to quick, place a brown paper bag over the top of the cake to stop browning. — rainbowbrush 10/18/2007

Jan's Chicken Pasta

Jan's Chicken Pasta

This works well with most pasta. I some times add veggies eg; brocolli, cauliflower or peas to this tasty casserole! You could add 1 can of cream of mushroom instead of chicken soup.I make 2 of these and I keep one of these in the freezer made up to the cook point all the time so it can just be popped in the oven. Very good when someone pops in at meal times. [I posted this recipe.] — rainbowbrush 10/13/2007
