Lemon CookiesThe dough is very sticky until you roll it in the powdered sugar, then it is managable. Wasn't sure what size to roll them so we did walnut sized ball and got about 6 dozen. We actually rolled larger balls of dough then broke them into walnut size once they were coated with powdered sugar and more managable. Cooked them 4 minutes longer because we used air bake pans. I will use cooking spray next time. They taste light and airy with a mild lemon taste.

Tortilla Soup with Chicken and LimeFaulous, spicey tortilla soup!!! It was a little too hot for my kids, but worth trying to tone it down. I added a drained can of corn and a rinsed can of kidney beans. It was delicious!
