I live and travel "fulltime" in our motorhome. It makes cooking on the road fun and sometimes challenging. I am a commercial freelance writer who loves to try regional foods and explore new territory. My favorite hobbies are: reading, traveling, geocaching, sewing, hiking, biking and motorcycle riding. I love dogs and the outdoors!
Since my husband and I are both Texans by birth, we LOVE Mexican food....at least our type - TexMex - which is not always available as we travel through this great country of ours. Since my cooking space is limited, we often cook outdoors on a gas grill, use our slow cooker and always look for easy meals with little clean up.

Crockpot Rotisserie ChickenGreat recipe. The chicken was moist, had a good color and just fell off the bone. You could use any type of seasoning mix with this including rotisserie chicken seasoning (available in stores) or your own mixes with different flavors. Will definitely make again! Thanks for an easy, delicious recipe.
