Barb's Holiday Au Gratin Potatoes

Outstanding flavor! Mine came out runny but that could be user error, since I soaked the potato slices in cold water to prevent browning while slicing. You could safely cut back on the liquid to save on calories without sacrificing flavor.

Refreshing Cilantro Lime Rice

Refreshing Cilantro Lime Rice

These measurements look off? Most recipes call for 2 cups of water to 1 cup of rice. Also the oil/salt quantities look flipped: 1 Tbsp oil and 1/2 tsp salt seems more appropriate. With these adjustments this recipe turned out awesome!

Platanos en Tentacion

I love plantains and so wished I'd like this recipe, but I halved the liquid, and it was still way too sweet for my taste, sorry!

Super Sweet Corn Bread

Super Sweet Corn Bread

This tasted OK, but not as good as I was hoping. Mine came out a bit dry and the cornmeal was a litlle gritty tasting even though I tried soaking it in the milk before adding other ingredients as another reader suggested. Maybe I'm just too picky, but I want corncake as good as the Cheesecake Factory! Wah!

BJ's Chicken Marsala

BJ's Chicken Marsala

Wanted a more lowfat version and found the sauce was lacking body, so I halved the butter/oil and added 1 cup of beef broth, 2 Tbsps half-n-half and some cornstarch to thicken. Loved the flavor that the oregano added.

Baked Creamy Chicken Taquitos

Baked Creamy Chicken Taquitos

Just made this for the first time and my peeps went CRAZY over it, raving about it after EACH bite! Will make it as an appetizer at the next family gathering to be sure!

BJ's Chicken Marsala

Sorry folks, but I was not a huge fan of this recipe. The first time I made it as posted and found it lacking in flavor. Decided to give it another try, but this time I doubled the recipe and added 1 cup of beef broth to give it more body. Also halved the butter/oil to cut down the fat and added any leftover dredged flour to thicken the sauce. Much better this tine!

Chipotle's Cilantro Lime Rice

Chipotle's Cilantro Lime Rice

We've made this rice several times, both as an accompaniment or addition to steak fajitas - it's excellent! Thanks for posting Guitarmom!

Sunday Pot Roast

Sunday Pot Roast

Wow, do we really LOVE this recipe, and to think I hated pot roast as a kid! Made it in a crock pot this time but found the Dutch oven approach more flavorful. I use a chuck roast since we don't like the stringy texture of a rump, and fresh herbs take it to a whole new level! Thanks again sgrishka!

Garlic - Parmesan Crusted Pork Chops

Garlic - Parmesan Crusted Pork Chops

I've made this recipe on a number of occasions but was running short on time tonight, so I combined the parmesan cheese and seasonings in with the bread crumbs. Coating the chops was way easier with absolutely no difference in taste!

Garlic - Parmesan Crusted Pork Chops

Garlic - Parmesan Crusted Pork Chops

Made this again tonight, this time with chix breasts, and it was equally as delicious as it was with pork chops! Hint: to prevent the seasonings and Parmesan cheese from coming off in the egg wash, press them by hand into the chops or chix. ;)

Fridays Jack Daniels Whiskey Sauce

Fridays Jack Daniels Whiskey Sauce

Made this again tonight, and it's so yummy I could drink in out of a bowl! I agree the shortcut method of using jarred minced garlic works just as well. Happy grilling!

Cape Cod Clam Chowder

This was a really great recipe! I added some leftover shrimp and crab, and it took on a really delicate flavor. Thanks for sharing!

Pork Tenderloin with Balsamic Cranberry Sauce

Pork Tenderloin with Balsamic Cranberry Sauce

This was really good and super-easy...a 30-minute dinner that tastes like you slaved over it! I used a 2lb pork tenderloin, sliced it into 1" steaks, then seared. The recipe made just enough glaze to generously coat all pieces.

Angel Hair Pasta with Seafood Sauce

Angel Hair Pasta with Seafood Sauce

Didn't make this exact recipe, but I did concoct my own recipe for crabmeat positano last week with almost identical ingredients. To create a sauce base, I added 2 Tbsp butter to the olive oil when sautéing the onions & garlic. Then added about 2 cups of canned chicken broth, 1 cup of a sweet white wine (Amalthea Cellars New Jersey Villard Blanc), approx 1 tsp oregano, and a sprinkle of garlic and onion powders, but I would recommend omitting the sugar in this recipe if using a sweet wine and not over-doing the sauce if using a delicate shellfish like crab. The leftovers were even better than the original meal, and everyone in the office was asking who had the terrific-smelling lunch!

Garlic - Parmesan Crusted Pork Chops

All hail to sgrishka for another 5-star recipe! Wouldn't change a thing. This was fantastic, and I'm not typically an overzealous pork fan. My kids cleaned their plates, and I had to physically restrain my hubby from eating any more.

Teresa's Awesome Lasagna

Teresa's Awesome Lasagna

Hands down the best lasagna I've ever tasted!!! Very gourmet, restaurant quality. I make a mean lasagna that my family is crazy over, but this recipe blows it away! Please don't be dissuaded by the time it takes to prepare...it takes no more effort than usual if you are accustomed to making your own sauce, and it can easily be portioned into 13x9 Pyrex dishes for two generous-sized meals. Many ways to modify this to your liking, all excellent. Like others, I used a beef/pork/veal and sausage mix. I doubled the meat and used crushed tomatoes for a heartier sauce. Also cut back on the onions (used 1 cup) and garlic (1 Tbs). Clean-up is easier if you don't add cheese to the sauce (it sticks to the pot). I would give this six stars if I could. An outstanding recipe, thanks for sharing!

Grandma's Sloppy Joes

Grandma's Sloppy Joes

I usually love Sgrishka's grandmother's recipes, and this was good, but the mustard stood out a little too predominantly for me. Next time I would use a half Tbs of mustard and add a little chili powder (1 Tbs) to give it some extra body and heat. On the flip side, I did like the barbecue sauce-like taste, and my very picky, Sloppy-Joe disliking 9 yr old thought these were the best Sloppy Joes she's ever had! So, my rating reflects an average of 3 stars for me and 5 from my kids.
