Spicy Baked Potato Wedges (Vegan)
I live in Salt Lake City: Greatest Snow on Earth. My favorite pasttime besides cooking is skiing then photography. I am a working mama so this Big Oven stuff is very useful, thanks Dad for turning me on to it.

Black-Eyed Pea StewVery tasty. I used olive oil (healthier), pinto beans (it was what I had), left out the jalapenos and I cooked the rice into the stew last 1/2 hour. I can't wait to make it with the real recipe!

Chocolate Banana MuffinsI do think this recipe calls for more sugar if you are using baking coco that isn't sweetened. I tried it with Stevia and it was GREAT and I used coconut milk instead of buttermilk. They were gone at my house within a day and I have toddlers for children (so they define the word picky). I also added a tbsp more flour and used a little less milk as I live at a higher altitude and that seems to effect my baking.
