Jalapeno Bacon WrapWe have been making these for years...incredible taste. but we never cut them in half. just slice on one side and than spoon out the seeds spoon in the cream cheese and wrap bacon (I cut bacon strips in half) seal with a tooth pick and place on grill... to re-heat them a day later either in a toaster oven or in a open sandwhich plastic bag int he microwave for about 30 sec. to 45sec and they taste almost new again!

Carey's Authentic Chile Relleno'sIf using fresh peppers,You can roast them and take the skin off and snip stem end off and " hollow " out, and FREEZE them in zip lock bags. They freeze really well! Just place them neatly in bags quart or gallon size. Buy them when they are in season summer, early fall and roast them -some stores will even roast them for you -like my mom says just keep an eye they do not over roast them for you. when you get home you just peel them and put them in the freezer so you have them all year round!
