Hoppin John Soup (Blackeyed Peas and Rice)This was a nice soup. I had left over honey baked ham that I used the bone to flavor the broth plus added some ham pieces. He family liked and it was easy to prepare.

Creamy Italian OrzoMy family loved it. It made a lot, but economical. I added chopped broiled chicken, more onion and garlic then called for, and a touch of lemon juice.

Crispy Baked Chicken FingersEveryone liked it. Can get creative with the breaking seasonings. It baked up crispy, but juicy on the inside.

Broccoli Rabe, Spicy Italian Sausage and Beans over PastaMy family liked it better then I did ... I loved the broccoli rate but not so much the sausage. I used turkey sausage. I will make it again as I have more sausage to finish. This time I will cut back a little on he red pepper and increase the amount of beans and Italian seasonings.

Chicken Bok Choy Stir Fry (Low Fat, Low Cal)Pretty good dish. My family all enjoyed. I added an onion and celery to vegetables. Might cut down on a little lemon juice and increase spices a bit more.

Penne Pasta with Lemon SauceGood dish. I added some Parma to thicken. Also let the dish sit for a short while, which also thickens it. Good favors.

Favorite Slow Cooker Italian Beef SandwichesGreat...the whole family loved it. I added sautéed red onions and green peppers. I layered the sandwich topped with slice of cheese and melted it under the broiler.

Best Ever Blueberry Coffee CakeGreat coffee cake and very easy to make. I made it a little more festive by using a bundt pan and drizzling a lemon powder sugar glaze over it. Served it for Christmas morning and it was a hit!!

Carnation Famous FudgeGood and easy. Not as sweet as the marshmallow fluff "never fail recipe". The kids are going to love this!

Homemade Baked Macaroni and CheeseGreat recipe. I added diced cooked chicken for a little more protein, used 1/2 real butter and half lite butter to knock off a little fat. Doubled the recipe as well for a big crowd, and it turned out well, everyone liked.
