Asian Orange Chicken

Asian Orange Chicken

This took a lot of time and was awful. It was a vinegary, syrupy mess. The marinade was good on its own but the sauce was way too much.

Easy Breakfast Potatoes

Easy Breakfast Potatoes

Yum! Made it with Whole Foods, "Southwest Bakes Tilapia" and steamed vegies. It was a good contrast to the spicy fish. Very easy and good.

Low-fat Citrus-marinated Chicken Tacos (8 Pts)

Low-fat Citrus-marinated Chicken Tacos (8 Pts)

I made a steak and chicken at the same time. The steak took to the maranade a little better than the chicken. However, neither really took up enough flavor to stand up to tacos. The meat was better alone as a mildly marinated meat. It lead me to believe this might be good to try on fish or shrimp. I will keep trying with this one. It's fast and easy. The other thing to consider is they type of salsa used. I used a fresh salsa and that might have had an impact on the strength of the recipe.

This is a little spicy but, I like spicy. I've served this to guests and it has been a hit every time.

All-Star Pork Meatballs

All-Star Pork Meatballs

Good and easy. I used prepared mustared and doubled the sauce. I also made smaller meatballs and put them into a casserole because I didn't want to wash the muffin pan. The kids liked them.

Lemon Artichoke Chicken

Lemon Artichoke Chicken

This was good. Even my husband, who doesn''t like artichokes, liked it. I did use quite a bit less butter than was called for though. I served with with some brown rice and green beans, but next time I would like some mashed potatos

Bourbon Chicken

Bourbon Chicken

Its not a stir-fry and taks longer than 30 minutes. Not bad though. I added less sugar, 1/4 c. Served with steemed broccoli and rice.

Angel Hair Pasta with Seafood Sauce

Angel Hair Pasta with Seafood Sauce

I didn't care for this. I should have known better since I don't normally like seafood in tomato-based sauces. The tomato sauce itself is quite lovely.

Good but, not the best. I think it does need an overnight marinade.

Southwestern Grilled Chicken Salad

Southwestern Grilled Chicken Salad

This was a little spicy but everyone liked it. We love garlic, so I added garlic to the dressing. I also added lime juice and cliantro to the marinade. The chicken would be good in fajitas or qusadillas.

Shrimp Scampi

Shrimp Scampi

Yum. As always, I didn''t make it exactly as written. I seem to have a serious problem with that. My husband has a problem with Tabasco, so we don''t even have it on hand, so I used pepper flakes and black pepper, I added the whole lemon, some white wine and thickened it with a bit of cornstarch. Served over linguine, it was fantastic.

Buffalo Chicken Burritos

Buffalo Chicken Burritos

The kids even liked this. I was surprised since one thinks black pepper is "spicy" and hates tomato and the other hates carrots. I omitted the celery, but that''s normal because I don''t like it, and as the chef, I get what I want. I also omitted the chicken broth because I used a non-stick pan and there was a significant amount of liquid in the bottom already, so I didn''t think it was necessary. I like the cheese. I had not had it before, but it melted nicely and was very good.

The only comment my family made was, there''s not enough avocado. I think next time, I''ll put in at least 2. Yum.

hi,
the ideal way woud be for you to cut what you need FROZEN. and then put the unused squid back frozen. once Unless it has been flash frozen @ sea then you must never re-freez it. For one thing the flesh become very acidic...good luck.
