Panko-crusted Chicken with Mustard-maple Pan SauceDelicious! I followed the recipe almost exactly. The chicken was cut-it-with-a-spoon tender and just as juicy. This is one of those dishes where you lick your plate afterwards. Even Denise liked it.

Big Jim's Seafood GumboI made this as much as i could according to Big Jim's recipe over at bigoven. Over there i uploaded a different picture. I couldn't get any fresh okra, so that was missing. Next time, either find a substitute or make this when okra is available. Nor did i have any fresh cayenne peppers; and if i could have gotten any probably would not have had the courage to use them. Instead i used 3 evil looking peppers of which i don't know the heritage. Well the gumbo was quite hot enough and i didn't even put any hot sauce in it. I though it was delicious ... Denise liked it too.

BJ's Chicken MarsalaHow does BJ actually get the surface of the chicken to look that way? That "breading" does not come off ... it is almost like it is part of the chicken.

Broccoli Cheese SoupI followed this recipe from BigOven.com fairly closely. Only big variation was that i think it a waste just to use the florets ... so i steam the stocks, puree them in food processor and add them back to the soup. It does make it thicker and more Brocollie-ee. Me i think it was an improvement ... denise said the soup at BJ's was thinner and she seemed to like that better ... but she said mine was good too.
