Mexican Cornbread CasseroleI thoroughly enjoyed making this dish. Instead of the creamed corn I used a bag of frozen Spanish style corn. I love spicy food so I added a bit of cayenne pepper to mine. This seemed to be more of a side dish instead of a main dish for me so I know what to do in order to serve it as one or the other. Either way it is a hit!
