I'm a stay-at-homeschooling mom of 7, living in Texas. I'm a geek, a photographer, a political junkie... but not a cook. My husband did virtually all the cooking for our family until recently. I'm trying to learn, but it's very frustrating!
I also had a brilliant idea -- I let my kids peruse the recipes here on bigoven.com and suggest dishes that *they* want me to make for dinner! Gets them interested in cooking and takes some of the work of deciding what's for dinner off of me!
I prefer simple foods, dishes with one or two ingredients (plus spices or a simple sauce). For example, one of my favorite things to eat is baked chicken (simply baked, not seasoned) served with hot sauce and ranch dressing. Another example would be pork chops with mashed potatoes (five ingredients for the whole meal: pork chops, salt, potatoes, butter, milk).
Except for the fact that I scorched it, this soup was pretty good and relatively easy to make. If you are wondering how much it makes, let me just say don't bother doubling it unless you're feeding an army! I am accustomed to doubling recipes for my family of nine, so I tried it with the soup. I ended up not able to fit all of the potatoes into my 7 quart dutch oven, and I had a TON of leftover soup! Making the recipe as is would have been just fine! — 10/21/2010
