What's for dinner?
Cold Soba Salad

Living in the beautiful Rocky Mountains, allows me to live a very blessed life. I get to ride my bike to work. But that is not why my name is Spinster. Because I teach 4th grade, I relish going to work every morning. Of course, as a teacher, reading is right up there on my list of favorite things to do. Good thing there are books on cd, because I also spin yarn from the wool of sheep and alpaca and any other fiber I can get my hands on. Then I knit like crazy! Good nutrition is very important to me because I have seen first hand the impact it makes on kids and their learning and behavior (never mind their teacher!) If we eat the foods that God made, He enriches our lives abundantly! Cooking in my solar oven and my dehydrator has been really fun. Eating food as close to the way God made it, is my goal, so milling flour, drinking raw milk, making cheese, etc, are all part of the routine around here.

Tomato bread is my absolute favorite food. I have it every year on my birthday. Good thing my birthday is in August!

Pretty much, I like everything except canned peas.

I might like pickled pig's feet, but I've never had them, so I don't know. My Slovak grandmother used to bring them when she visited, but still, I never ate them.

I did not like the baking soda cookies I made accidently, the first time I made cookies in 4H.

CATFISH TACOS W ITH TOMATO AND AVOCADO SALSA

I made this recipe mostly for the salsa. It was fantastic! Instead of the catfish, I fried up some tilapia, sprinkled with Emeril's Essence, which was leftover from our Thanksgiving fried turkeys. The salsa worked great with these much simplified fish tacos. The feta sounds fantastic and I'll try that another time.

These cookies received rave reviews from my husband's friends, who dropped by as the cookies were coming out of the oven. They loved the spices. I made a few tweaks to the recipe. I used freshly ground soft white wheat for the flour. I, also, used a whole egg instead of the white. Because I live at 7,800 ft., I used 1/4 cup shortening and 1/2 cup butter, instead of margarine. Next time, I plan to add nuts. Walnuts, pecans or even sunflower seeds would be great.

This was a tasty dish, although it certainly did not have overpowering flavors. My husband liked it and I did, too. It is perfect for using up extra veggies. I added cherry tomatoes and didn't use the mushrooms. I used soba noodles instead of angel hair.
