Wow. Best meatloaf recipe I've had. Not usually a big fan of meatloaf but this was really good! Husband said this recipe definitely needs to go into the weekly rotation. I used half ground beef and half ground turkey. Made extra sauce to put on the second half of cooking. Perfect.

Creamy Chicken Enchiladas

I always use rotisserie chicken and have started using the hot diced green chilies which adds a nice kick. Also, I like to make it the day before and refrigerate it overnight. Makes it even more creamy! Very easy and I always get asked for the recipe when I bring it to a gathering.

These are very good. I made full size crepes (7 inches round or so) and they turned out great. However, they are too greasy. I will definitely cut the butter next time (probably in half).

Yes it is low carb and Atkins friendly. The info below is not correct about the gravy packets. My brown gravy packet is 12 grams per package which is 1 gram per serving. The Ranch is 16 grams per package which is 1.25 grams per serving, and the Italian dressing is 8 grams per package which is about .75 grams per serving. Therefore it's about 2 grams of carbohydrates per serving.

This recipe is really good! I was short on time, so I didn't marinade the salmon. I put all the ingredients and salmon (fillet with no skin) in a 9x13 and baked it until done. It turned out great! I can't wait to make it marinaded and grilled.

Even though it will do in a pinch, canned chicken is not actually the best choice for this recipe. If you do use it, a little more salt or seasoning may be in order. My preference is cooked rotisserie chicken - it is fantastic! I haven't tried this yet, but my sister puts chopped tomatoes on top as well.
