What's for dinner?
Artichoke Pesto Hummus

bold and adventurous in the kitchen as in life.  sometimes successful and sometimes not, but always give it my all.

italian in my genes, italian in my soul, and definitely italian in my kitchen.  although i work in all cuisines of the world, i consider them all to be just variations and elaborations of the flavors and techniques of the sublime cuisine of italy.  sorry to all of you french classicists.

My Caesar Salad Dressing

My Caesar Salad Dressing

this dressing is exceptional. i was actually looking for a blue caesar dressing recipe as i thought it sounded like a good combination. followed this to the letter with one addition. as a vegetarian, i do not eat anchovies. i once got a tip from a professional chef in an upscale, healthy restaurant to substitute kalamatta olives for the anchovies. although this recipe did not call for anchovies, i added the olives as suggested by my chef friend. they add a briny flavor that is reminiscent of salty anchovies.

Buffalo Ranch Buttermilk Dressing

Buffalo Ranch Buttermilk Dressing

used my own homemade mayonaise and this was first rate. it has true ranch flavor and is far better than any other recipe that i have tried. is great when used on ranch potato salad.

Black Bean Burgers (spicy Optional!)

Black Bean Burgers (spicy Optional!)

used as a base for my own version. the proportions are on target, which enabled me to improvise with seasoning and flavors. i formed patties and baked in 350 degree oven. i omitted the final flour dredge as well.

Chocolate Cherry Bread (Machine) - Large Loaf

Chocolate Cherry Bread (Machine) - Large Loaf

used elements of this recipe with others from the chocolate yeast bread recipe and developed a chocolate cherry loaf using standard baking techniques instead of the bread machine. met with rave reviews. makes a great dessert french toast with ice cream and cherry syrup and also bread pudding.

Italian Chocolate Bread Pudding (Bodino Nero)

Italian Chocolate Bread Pudding (Bodino Nero)

excellent base recipe. i used chocolate cherry bread, added dried cherries and chocolate chips with the bread and topped with caramel cajeta. absolutely "death by chocolate." baking time was 15 minutes longer than listed in the recipe.
