The bread was to mushy. It did have an excellent taste but I would not make this again. Perhaps the dish would be better if the bread was cut into cubes instead of overlapping the bread. I HATE mushy French toast. Yuck!

super awesome....I wish I had made two dishes. I barely got to taste it because the family ate it all -- even the sauce. Will make again this weekend. OH, we had vanilla yogurt ice-cream with it and I used Honey Crisp apples. Very yummy.

Rosemary Roasted Chicken with Potatoes

My son loved the potatoes everyone else said it was delish. My only variations were I lightly seasoned the chicken with Tony Chachere and used wings instead of drumsticks. The potatoes were a tad salty so next time I add half the salt in the mix and sprinkle the rest when the meal is done. My daughter has to get used to the Rosemary. She said the "leaves" kept getting in her way...lol I think I might cut up some more potatoes and cook it with the baking juice that is left-over from the meal. :-)

Taco Meatloaf

Very simple and quick to make. The entire family loved it. I made mini loafs and added Mexican cheese as well as some chili mix. The only thing I don't care for was how the loaf separated at the first layer of salsa...it made it a little difficult to serve onto plates. I will make this again and again.

Just tried this recipe and its really good. I used butter instead of oil, used pork chops instead of chicken, and used Italian bread crumb...oh and I seasoned my meat with California Garlic Salt and a little seasoning salt. Its was good with rice and a salad - can't wait to try it with chicken.

Cheesy Mexican Chicken

The recipe was on point. The entire family loved it. I seared the breast beforehand and added chopped onions & bell peppers as well as low sodium taco seasoning. I waited to add the tortillas chips and 1/2 cup of cheese at the end and baked for about 5 min. The chips turned out nice & crisp. When I served the dish I added salsa and door cream for those that wanted it AND had veggies on the side. The kids were full for the rest off the night. Next time I'll shred the breast after searing so the kids will have a easier time digging in :-)
