Zucchini and Eggplant with PorkThe eggplant had a lovely, fruity taste. The original called for 1 teaspoon paprika; I used half paprika and half cayenne. I added the soy sauce. I thought it need the additional flavor. Very nice.

Corn and Zucchini Au Gratin with Chipotle PeppersI was really happy with this recipe. It was so tasty! We cleaned the bowl.

Thai Pork BurritosI really liked this. It was fast and easy and had a great Thai taste. I turned up the heat by doubling the red pepper flakes. Yum!

You can make it yourself (you can find directions on the web) or buy it from an Indian grocery in your neighborhood (or again, you can find it over the web).
