My favorite food is mexican. I have been obsessively making different types of enchiladas for around two years. I also like Italian and Greek food, and sometimes I enjoy vegetarian receipes.

New York Style CheesecakeVery good recipe for a nice thick cheesecake. I made it exactly as the recipe was written and then served it with cherries on top. My husband loved it as well. Sadly, after we each ate one piece, someone balanced it on top of something in the fridge, and when I opened the door it fell out and splattered all over the kitchen floor. ): I will be making it again.

Best Ever Blueberry Coffee CakeMade this for Christmas at my in-laws. Half of it was gone in about 5 minutes and every took seconds. My mother in law held the rest of the cake hostage and gave me back my pan. I will say though, my husband and I have tried it with the cinnamon and neither of us liked it. If you dislike the cinammon, I used graham cracker crumbs and it turned out excellent. I also added an extra teaspoon of vanilla. Best, most moist cake ever.

Easy Taco SoupVery good and very easy. Added cilantro and about a tablespoon of chilli powder for a little spice. My husband loved it and he is very picky. He also has a weird hang-up about beans, but really enjoyed the soup.

Chipotle's Cilantro Lime RiceIt was good, but tasted too limey to me, i am going to attempt again with less lime, i may have just overdone it.

Best Ever Blueberry Coffee CakeThis recipe is great, I made it for my boyfriend, who doesn't really like blueberries. He ate the whole cake and then a second one the same week. Its nice and moist and I'm sure you could make it with any fruit. Trying apples next.

Baked Acorn Squash with Brown SugarI didn't have acorn squash, so I just used yellow squash and it was still good. One thing I would suggest us to try it with cinnamon. I did and it was great.
