What's for dinner?
I am a recently retired home care nurse who now has much more time to spend on making those special dishes. I received bigoven.com as a Christmas present last year and have used it many times. My hubby and I usually try to make something special and different every Saturday evening. I have two great sons who are married and have provided me with 3 lovely granddaughters. The picture above is Rachel, age 3. We enjoy camping, fishing and boating. I have a nice little vegetable garden that I use to gather some of the makings for my dinners.
As we are getting older, we try to eat more healthy. We have learned to adapt many recipes to lower fat versions which are still tasty. We have also been eating more vegetarian type foods. Our favorite recipe is Shrimp Feta a la Neil from a very o

The solution is to partially bake it first, then fill it and proceed to bake it as per the recipe, being careful the edges do not burn. Do not subtract the pre-baking time from the recipe's total.

Fresh Corn Frittata and Smoked MozzarellaI would give this recipe a 5 star rating easily. I used eggbeaters and egg whites to prepare to avoid extra cholesterol and it was delicious! We had it for dinner but I would definitely consider for that special breakfast. It was easy to prepare in no time at all.
