I recently retired as teacher of computers and electronics at an Ontario community college and am currently working part-time as a technical writer. My husband and I enjoy travelling and trying new food and wines.

At the moment raw milk goat's cheese is right up there! I also adore red peppers (especially grilled) and fresh artichokes. And generally I really enjoy preparing one-dish meals such as hearty soups, stews and casseroles.

This is an incredibly delicious way to use up leftover turkey. I used 9 small corn tortillas and only put 1/3 cup of the filling into each. I also used a casserole that couldn't be put under the broiler, so I baked for 20 minutes with foil and another 10 without. Can't say enough about how tasty this was.

I've stumbled across your Portuguese Lamb or Goat Stew (Chanfana) recipe. Well, being Portuguese and a natural to the Capital of Chanfana, (the town of Miranda do Corvo and surrounding village of Semide) I just want to suggest that if Susan comes to Portugal she should try the real thing (not exactly this recipe). Any way this seems good enough but I if she liked this, she will be surprised by true CHANFANA. By the way this is one of my favourite Portuguese foods.
