I recently retired as teacher of computers and electronics at an Ontario community college and am currently working part-time as a technical writer. My husband and I enjoy travelling and trying new food and wines.

At the moment raw milk goat's cheese is right up there! I also adore red peppers (especially grilled) and fresh artichokes. And generally I really enjoy preparing one-dish meals such as hearty soups, stews and casseroles.

Turkey and Spinach EnchiladasThis is an incredibly delicious way to use up leftover turkey. I used 9 small corn tortillas and only put 1/3 cup of the filling into each. I also used a casserole that couldn't be put under the broiler, so I baked for 20 minutes with foil and another 10 without. Can't say enough about how tasty this was.

Cranberry Orange SauceI am not a huge fan of cranberry sauce, but this one is amazing! Aside from turkey, it's great with ham and I have been known to use leftovers as jam on toast.
