Bacon, Egg, and Cheese Breakfast Casserole

Great weeknight dinner. I substituted two medium, peeled, grated potatoes for the water and dried hash browns. Baked it for 10 additional minutes. My husband loved it. — ladybugplus 5/16/2012

Indian Bread-Naan

So delicious. I was afraid to crank my oven as high as it would go, so I went with 450 and used my commercial grade half-sheet pans on the rack that sits about 1 inch above the bottom heating element. It only took 3-4 minutes on each side for perfection. 5/12/2012
Rhubarb Crunch

Rhubarb Crunch

I'm not a huge fan of rhubarb, but this was delicious. (I down-sized the recipe for 9 servings so it would fit in a 9x9 pan. Since the pan was glass, I dropped the temp to 330 and baked it for 50 minutes.) — AlderSlope 5/9/2012

Mexican Lasagna with Black Beans and Corn

This was a hit. I agree with the comment about adding some corn/tortilla chips to give it a little crunch. — khandih 5/9/2012
Powdered Sugar Frosting

Powdered Sugar Frosting

I made the version with orange juice, and it was a wonderful addition to the Lemon Cloud Tea Cookies. Heating the liquid made the frosting very smooth and easy to spread. — bonnybrown 5/4/2012
Lemon Cloud Tea Cookies

Lemon Cloud Tea Cookies

I would give this recipe four stars as is, but if you top the cookies with a generous smear of Bonnie Brown's Powdered Sugar Frosting (made with orange juice) they are definitely a five-star treat. — khandih 5/3/2012
Crustless Quiche from Atkins

Crustless Quiche from Atkins

My family really enjoyed this with a side of salsa. (I successfully substituted buttermilk for the cream in the recipe because Old Mother Hubbard's cupboard didn't have any cream!) — MADuttonDVM 5/3/2012

Granola Bars

Wow. Nicole is right. These are definitely better than anything you can buy at the store. (I added a glop of cashew butter to my most recent batch for a flavor change. Delicious!) — Nicole501 4/28/2012

Simple and delicious. Works as a main dish for me, myself, and I. — horikor 4/21/2012
