Delicious. I used delicata squash with vegetable bouillon instead of stock. I also left out the cinnamon but may try it next time. Half a recipe for one small to medium delicata squash is plenty. I also added a picture. I hope the submitter does not mind. 12/13/2011

Very tasty. I used vegetable bouillon instead of chicken broth. I also put the juices through a food processor and then let them sit in the refrigerator for a few hours. Then I skimmed off the fat and thickened the juices with Wondra flour. 11/4/2011

This is a great basic recipe. It's easy to vary it in dozens of ways: add peas or broccoli, add your favorite herb, a dash of Cayenne pepper etc. Lower the calories, fat and salt by making your own mushroom sauce with skim milk instead of mushroom soup. I love it. 10/30/2011

Excellent. I chopped the garlic and mixed it with the olive oil. Then I added tarragon and drizzled it over the potatoes. Last I dusted it with Parmesan Cheese. Serve with ham, brown and serve rolls and brandied cranberries. Yum. — fireb4smoke 10/30/2011

Yum! and thank you to those who suggested cutting the herbs. I cut the herbs to about 1/2 teaspoon or less and added parmesan and Cojack cheese. I think white cheeses might be best. Maybe mozzarella. 9/30/2011
