Dameon's Curried Chick Pea Soup

This is an amazingly flexible recipe. Don't have fresh tomatoes? Used canned, stewed, or otherwise. Don't like it that spicy? Omit jalepenos. I've used half curry, half garam masala. You will likely have to puree in batches as it is a large recipe. Be careful if using a hand processor as the chick peas tend to explode when pureed. [I posted this recipe.]

I do not know who originally developed this recipe, as it was e-mailed to me several years ago and then transcribed into a cookbook without the credit. If you created this - THANKS! I have added the mace and done away with parsley called for in the original recipe, since I don't see the point of that stuff. I have also made it with sliced mushrooms (both white and portobello) in addition to the above ingredients. You can also use balsamic vinegar instead of white vinegar for a bit of a different flavour. I have made this several times, and it has even the biggest meat eaters going back for seconds saying things such as "wow, this is the best moussaka I've ever had." [I posted this recipe.]

Morrocan Chicken with Couscous

I found this dish both very tasty and easy to prepare. Even after spilling (and extracting as much as possible) the cinnamon, it was not too overpowering. Next time I will add some cloves and some more coriander than the recipe calls for. Also wonder what anise or fennel might bring to the mix....but nothing too crazy as the subtle flavours of this dish were superb. Makes me wish I was from Morocco.
