Agree about the bouillon being unecessary; the juices are more than enough. I think the right kind of bbq sauce could make all the difference: mine (bullseye Sweet and Sticky) didn't have a lot of character. For a recipe that wants to suggest Mexican food, the potatoes are an odd touch. And 9x12 is too big for the quantities listed. Should be 9x9 or so. Lastly, it's not clear what the tortillas are for; the casserole does not offer opportunities for mopping up, and it's already strachy.
