My first time both making and eating falafel--can't wait to make it again! Made with taziki sauce (1/4 c. mayo, 1 clove garlic, 2 tsp. lemon juice, and 1 T. fresh mint) and it was a huge hit at our house!
This recipe is delicious! My husband, who hates sweet potatoes, went back for more and ate the leftovers for lunch the next day! We actually like it better with only one can of tomatoes, and seeds from about 1/4 of the jalapeño. It's a little sweeter and spicier that way; perfect balance! Enjoy!
