I love cooking for my partner, Paula. Sometimes I also get to cook for guests. My cooking focuses on natural ingredients and making as much as possible from scratch, and also low-carb (I'm diabetic and allergic to wheat).
I've also started canning this year. I had done some canning in the past, but this year I'm being much more ambitious. So far, I've canned tomatoes, cucumber pickles, green bean pickles, cauliflower pickles, cranberry sauce, mint jelly, taco meat, spaghetti meat sauce, and pork carnitas.
I've also been exploring steam canning as an alternative to water bath canning. I'm going to post some of my canning recipes, but I wish there was a canning category.

My favorite food is artichokes. I cook them in the pressure cooker so they are not the least bit soggy.

Cranberry Sauce (Better Than Canned)This is excellent. There is just enough sugar to offset the tartness of the cranberries, but not so much as to mask their flavor. Paula says she's never going back to canned as long as I keep making this for her.

Bourbon ChickenWhat a wonderful dish! I'm giving it four stars because it's a little sweeter than I like and it has a bit too much sauce. But with a few minor adjustments, it will be perfect! Thanks, Demonica, for a wonderful dish! It's in my faves list!
