Gambas al Ajillo - Garlic Shrimp

I loved this shrimp! It's the closest I can get to my favorite dish at our local Chinese restaurant. I'm going to make this again and add green onion and white onion. I love garlic!

South Texas Spanish Rice

South Texas Spanish Rice

Interesting variation to how I (from south Texas) make my rice. Never met anyone who puts peas in spanish rice. I use green pepper and no jalapeño. I also add fresh tomatoes and cilantro. Also there is no mention of the cheese yet the picture shows it. (also have never added cheese to my south tx rice.

Cola Chicken

Cola Chicken

Made this tonight and my hubby and kids loved it. Dr pepper is my fav soda so that's what I used with a 50/50 ketchup- BBQ sauce mixture. However it wasn't really my cup of tea.

Crockpot Kalua Pig

Crockpot Kalua Pig

I wanted to try this after going to Hawaii last month and having authentic kaluha pork at a luau. It fell flat. There wasn't very much flavor at all and I actually used only 4 lbs of pork instead of 6. I won't be making it again :
