I used Plant City Strawberry Onions instead of Vidalias. It was my first time cooking with this particular local produce. The strawberry onion's intrigue is that it is planted around the strawberry fields (Plant City's BIGGEST crop) to keep critters away. Once strawberry season ends these large hearty onions are pulled (bulb and greens) and sold at markets claiming that the groundwater from the strawberries causes these onions to be sweet like vidalias. I have to say this was a good choice. If you ever have the chance to cook with it, it is an exceptional onion-musky and sweet. This dish was a perfect one for my first time using plant city strawberry onions. It is a very nice, fresh and acidic Florida Spring dish!

I think biscuits and gravy has to be my favorite meal ever! Since I made the switch from Vegetarian to Vegan over a year ago, I haven't been able to indulge myself. I came across this recipe and made it vegan style with tofu crumbles, soy milk and margarine. It was pretty good, however when you make vegan gravy you can be a little more heavy handed on the spices as you are not cooking in meat fat. I used paprika, cumin, salt & pepper for a nice rounded flavor.

These came out better than I had anticipated. I followed the recipe almost to a tee, and when I pulled my dough out of the fridge it was neither silken enough to pour or thick enough to shape. I spooned it into cupcake cups and baked them on a cookie sheet. I thought they were going to be tasty but ugly, because of the way they looked when I spooned them into the cups, but they turned out looking light and fluffy and tasting equally as good. I am always looking for easy bread recipes that can be converted into vegan bread (soymilk instead of milk, and make my own dry bisquick mixture!) and this worked out great. I served them with white gravy and braised greens, vegan style of course! paula dean would be proud.

This recipe is so easy, and tasted amazing! I love thai food, and I am happy there is something I can whip up in just a few minutes that gives me a similar satisfaction! I made it vegan with tofu crumbles in place of egg! Mmm!
