Cuban Crushed Potatoes

Cuban Crushed Potatoes

These present well on a plate and taste good though the consensus at our table is that they were a bit dry, so we suggest the addition of a dollop of sour cream. It's nice to have a fresh idea for serving potatoes.

Cauliflower Au Gratin

Cauliflower Au Gratin

We included this in our family christmas meal this year and it was fabulous. As advertised, it melts in your mouth. Everyone was very impressed with this dish. I particularly liked the subtlety of the bechamel sauce with the hint of bay leaf and nutmeg.

Basil Chicken in Coconut-Curry Sauce

Basil Chicken in Coconut-Curry Sauce

This lacked the heat that I look for in this is kind of dish. I suppose it is a welcome compromise for those who like these "Indian" flavors, but don't prefer much heat. The meat was very tender. If I were to make it again, I would tweak it to add some heat.

Best Ever Blueberry Coffee Cake

Best Ever Blueberry Coffee Cake

The cream cheese adds a wonderful texture to this coffee cake. It was very easy to make. I added a cup of pecan pieces because I prefer nuts in a coffee cake. Next week I'm making it as a holiday offering to the staff at the school where I teach.

Black-Eyed Pea Stew

Black-Eyed Pea Stew

I was very pleased with this recipe! I only deviated from the recipe on one point and that is that I added fresh chopped collards. It was a great addition.
