This étouffée is amazing. My boyfriend is from Baton Rouge, LA and he was very impressed with his Texas girl's version! The best way to peel tomatoes is to score the bottoms and place them in boiling water for 10-15 seconds and then immediately in to an ice bath. The skins peel right off. These brownies have a perfectly chewy, fudge-like texture. However, I found the flavor to be bitter and unsweet. I used Hershey's Cocoa Powder and it was fresh. You can taste that the bitter flavor from having too much cocoa and not enough sugar. — Gertis 1/8/2011

Three stars because the cookies are good, but not at all as described. I followed the recipe exactly, and unlike some of the reviews stated, my cookies were not cake-like at all.
