Core Whole-wheat Chili-mac 6 Points

Core Whole-wheat Chili-mac 6 Points

I just started on Weight Watchers yesterday and found this recipe on Big Oven so I thought I would give it a try. I thought it was a good recipe but I would alter it to your own specific taste as the recipe author suggested. I ended up using soy protein crumbles instead of ground beef beacause I had some on hand and wanted to use it up. I also increased the green chiles to 3 tablespoons but other than that I left it alone. I will make this again when I have a little time to play around with the recipe but I thank gbolton for a solid core recipe that is easy and quick to make.

Black Bean-Taco Salad with Lime Vinaigrette

Black Bean-Taco Salad with Lime Vinaigrette

I made this taco salad last night when it was so hot I didn't want to do any cooking to heat up the house. The whole family enjoyed this recipe; one of my sons who hates vegeatbles even had seconds. I particularly liked the lime and cilantro flavors in the vinaigrette in addition to the regular taco seasoning of cumin. I did add some salsa to the top of my salad because I am a fan of spicier food but overall this is a great recipe and it assembles so fast and easy!

Easy Monkey Bread

Easy Monkey Bread

This recipe was very easy and simply incredible. The refrigerated biscuits worked out great. I ended up making it without the nuts since one of my kids doesn't care for them but I think it would have beed better to include them. We had it as a weekend breakfast and everyone loved it. The only trouble I had was the top dried out somewhat but when you flip it over and the sauce runs down it helps to cover that up. I will be making this recipe again!

Louisiana Red Beans & Rice (light Version)

Louisiana Red Beans & Rice (light Version)

I like spicy food so I sometimes throw in serrano or habenero peppers and I definately use a generous amount of hot sauce (I prefer Cholula). I omitted those items from the recipe for those who want a mild version. I garnished the dish today with some sliced green onions and it worked out great. I also used white rice in the photo because I didn't have any brown rice in the house. [I posted this recipe.]

Thanks for the medal, wineguy. Your question made me think I *HAD* to look it up. So it wasn't any trouble at all. Enjoy making some nice stock soon.
