What's for dinner?

Grilling and Smoking are amoung my favorite cooking methods. Cooking with a wood fire is preferred over charcoal or propane. I often have the smoker fired up and working while frying fish and hushpuppies. If it can be cooked outside, I'll most likely enjoy it.

World's Best Coconut Cake

World's Best Coconut Cake

Very moist and delicious! I used 9 inch round pans, Duncan Hines Coconut cake mix and milked and shreaded fresh coconuts. The Creme de Cacao and Cream of Coconut topping prior to frosting really made a big difference in the moistness and taste. I would suggest removing the cake from the pan after the 15 minute cooling period and prior to topping if the cake is to be presented on a cake plate instead of in it's original pan.

WARNING: Cooking foods in plactic CAN be harmful to your health. I commissioned Sun Coast labs to anylize a variety of foods cooked in plactics both on the stove top and microwaves. The results were traces of chemical compounds known or suspected to cause a number of health related issues including cancer. Plastics included storage containers, bags and wraps. Even some plastics rated for boiling and microwave cooking leached chemical compounds into the foods being cooked.

Hound's Barbecue Spare Ribs

Using the "$1000 steel plate 3-chamber log burner" method with Hickory wood, and "Chugwater" Chili powder, this recipe came as close to the best BBQ I've ever enjoyed. Note: my pit has a water chamber in the bottom and I used seasoned Hickory wood from a felled tree, not store bought wood chips. The meat nearly FELL off the bone and I found my guests sucking on the bones after the meat was gone.

Extraordinary Apple Pie

Ooooo this is GOOD! I chilled my pie prior to baking and cut decreative slits in the top crust. Using a bakers brush, I applied egg wash (water and egg mixture) and sprinkled with a mixture of Nutmeg, Cinnamon and table sugar. The first slice was so good I had to try another topped with French Vanilla Ice Cream. The extra "Start to Finish" time was allowing the pie to cool for slicing.

This is a very harty dish that sticks with you. It's great for lunch on a cold day. I found that a crock pot, slow cooker works quite nicely with this recipe. I only added some salt and pepper during the preparation. This recipe also works with Lima beans. Ahoy Mate, try it, you'll like it!

Slow Cooked Spaghetti Sauce

Instead of ground beef, I used pulled deer meat and Italian sausage. Mince the garlic, dice the onion and lightly sautéd both in olive oil adding a pinch of Emeril's Original Essence. I like fresh mushrooms so added the same in the sauté. Add the sauté to the rest of the ingredients, including a pinch or so of pepper. Warm on "High" then reduce the slow cooker to the lowest setting. Stir occasionally. Hint: If possible, allow to refridgerate over night and return to the slow cooker to heat the following day.
