Only changes I made was to add some sliced carrots and use Kirkland Organic no-salt instead of the salt and pepper. An easy to make side , particularly while preparing a bit more complex main dish.
I think this is a really good recipe. I made mine a little different though. I cut all of the vegetables into quarters and substituted the asparagus for button mushrooms. turned out good. probably wouldn't quarter the vegetables next time I did it though. the Zucchini and Squash got a bit mushy. I definitely think it turned out better with the mushrooms instead of the asparagus. I like asparagus but it seemed like the odd man out to me and thought mushrooms were a better fit.
