Teenage Vegetarian

I'm a concerned grandmother facing an extended summer visit from my vegetarian 14 year old granddaughter.  Help!  How can I be certain to meet her nutrition needs without cooking two separate meals, one for her and one for me and my meat loving husband??

Spa Magazine - spaghetti squash, onion and cheddar cheese

There was a fantastic recipe in Spa Magazine for a tart using a spelt crust.  It was almost like a quiche (lots of onion garlic and oregano...)  I lost the recipe and can't locate it anywhere!!!  Anyone have the recipe?  Something like it?

Bengal Red Lentils with Spices

This is a great vegetarian recipe (uses butter).  So aromatic and delicious!  No special skills required.  Leave out any spices you don't have on hand, and you'll still love it.

potlucks

potlucks are a super fun way for like minded fatties to get together and geek off about food. potlucks are just this. they're like the Comicon for foodies. except instead of getting anxiously excited about graphic novels, we're all talking about vegan recipes and how this is the most food in one place that we can actually eat. I have themed potlucks once a month, and everyone brings something vegan for everyone to share. I did a Mexican potluck for Christmas time and i made a motherload batch of vegan tamales. It takes awhile, but its rewarding for sure.  i used the traditional masa flour mixed with veggie shortening (instead of lard) and made yummy fillings. the home made tomatillo sauce was the most fun vegan chili reyenos are fatty yum. and the vegan or cooking Intimidated brought guac or salsa so everyone wins.  everyones bellies. winners. the bellies.
